Kosho: The Char Siu Noodles That Bank Presidents Come to Pay Respects To | Yokohama Chinatown
Hi everyone, it's Boss.
The first restaurant in the boss-meshi series is Kosho.
Look at the photo. At a glance it's an ordinary, simple bowl of char siu noodles.
And that's exactly what's puzzling about it.
The mystery of this place
The char siu is shikinbo, a rare cut. A clear chicken broth clings nicely to the wavy noodles.
The owner, Take-san, talks in rapid old-Tokyo style and has real spirit.
And yet bank presidents come here to pay their respects when they take office. Yokohama's senior figures are regulars.
Why? It makes no sense.
But eat it and you understand. Really.
In clothing terms, it's the piece with no logo and no pattern that you only understand once you put it on. That's what these char siu noodles are.
Behind the flashy restaurants, there's a bowl like this
In Chinatown it's the showy places that catch your eye. But step into the alleys and you find a bowl like this.
I've been doing business in this town for twenty-six years and I've been to over a hundred restaurants. I'm only going to write up the ones I can honestly offer as homework for your next trip to Chinatown.
Kosho is on Kanteibyo Street, close to ROUROU.
